Finding magic in the mundane just might be the secret to a joyful life. In this episode, we'll talk about how an ordinary existence can be full of more intention, meaning and, yes, magic! If you're a fan of Trader Joe's, cinnamon brooms, and pumpkin spice lattes (a polarizing beverage, for sure!) then this episode is for you. Today's witchy walk will include rushing water, inviting puddles, and a fair amount of mud after three days of continuous rain. The autumn leaves are just starting to turn, the air is getting crisper, and witchy folks are here for all of it! Are you ready to walk? Let's stroll!

What's for Dinner?

Mushroom & Wild Rice Soup

1-2 tablespoons olive oil
1  onion
4 carrots
3 stalks celery
16 oz mushrooms (whichever ones you like!)
Garlic (till you're happy!)
5 cups veggie broth
1 can full-fat coconut milk
1.5 cups uncooked wild rice
3 tablespoons all-purpose flour or corn starch
2 teaspoons Herbs de Provence
Salt & Pepper
2-3 handfuls greens (optional)

Directions: Sauté onions in olive oil till translucent, add the rest of the veggies and pinch of salt. Cook for 8-10 minutes, Add broth, coconut milk, rice, and herbs de Provence. Mix cornstarch or flour with a few tablespoons water, add to pot to thicken. Simmer over medium high heat for 35-40 minutes (covered) until the rice cooks. Stir frequently to avoid sticking. Uncover pot, cook for about 10 more minutes until the rice is soft and the broth thickens. Feel free to add fresh greens at the end if desired (spinach and kale work well).
