Green Goddess Dressing
1 medium ripe avocado or cashews
1 cup parsley leaves and stems
1 cup mixed soft herbs , such as basil, dill, and/or oregano
1/4 cup nutritional yeast
2 tablespoons chopped chives
1 lemon , juiced
1 teaspoon lemon zest
2 tablespoons olive oil
2 teaspoons capers
2 garlic cloves
½ teaspoon salt to taste
Freshly ground black pepper
Vanilla & Honey Avocado Pudding
Ingredients:
1 ripe avocado
2 to 3 tablespoons honey
2 teaspoons vanilla extract
1 teaspoon chia seeds
1 cup milk of choice
Directions
Place the avocado, honey, vanilla extract and chia seeds in a blender (or food processor). While blending, slowly pour in the almond milk until the pudding reaches a creamy consistency. Divide among ramekins/glasses and refrigerate at least 30 minutes.
