Knowing how to rest and when to trust are two skills many of us struggle to master. Slowing down and letting go require setting our egos aside in order to open ourselves up to something greater. In this conversation, I'll share how this is personally showing up for me after a recent bout with Covid and a possible house move on the horizon. What's for dinner?
Refrigerator Fried Rice
Ingredients:
Drizzle of Olive oil
Leftover rice
Crumbled tofu
Garlic
Veggies (whatever you have!)
Coconut aminos
Vegan oyster sauce (optional)
Hot sauce or kimchi
Fried eggs
Scallions
Directions: Sauté garlic in olive oil. Add tofu and veggies, sauté for a few more minutes. Add rice, coconut aminos, oyster sauce, and hot sauce or kimchi. Top with fried eggs and scallions. Enjoy!
Chocolate Peanut Butter Banana Bark
Ingredients:
2 small bananas, sliced
¼ cup natural peanut butter
½ cup chocolate chips
1 tsp coconut oil
flaky sea salt sprinkled on top
Directions: Slice bananas, single layer on parchment paper. Warm peanut butter until pourable, spread PB over bananas. Harden in freezer. Remove from freezer. Add chocolate chips and coconut oil to microwave safe bowl, microwave for 30 second increments, stirring between each. It shouldn't take longer than 1-2 minutes total. Spread chocolate over top, sprinkle sea salt, freeze. Enjoy!
