Roasted Potato Salad
Ingredients:
New potatoes
Red onion
1/3 cup olive oil
2 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
1/4 cup nutritional yeast
2 tablespoons grainy mustard
Garlic cloves diced
Fresh herbs
Salt & pepper to taste
Instructions: Preheat oven to 425 degrees. Dice potatoes, coat with olive oil, salt and pepper. Roast until fork tender. Mix diced onions, lemon juice, olive oil, garlic, nutritional yeast, mustard, red wine vinegar, herbs, and salt & pepper in a large bowl. Add cooked potatoes, coat thoroughly.
Chocolate PB Dates
Ingredients
Instructions:
Slice open all of the dates (and make sure there aren't any pits).
Stuff each date with peanut butter.
Drizzle honey on top of each date.
Top the dates with coconut and chocolate chips.
Place the baking sheet into the freezer for at least 20 minutes.
