Loaded Sweet Potatoes
• Sweet potatoes
• Protein- chicken, ground Turkey, plant based meat, beans - sautéed with onions and garlic, seasoned to taste
• Roasted red cabbage or broccoli
• Corn
• Topped with avocado or salsa or cheese or sour cream
Instructions: Preheat oven to 400 degrees. Wash and scrub potatoes. Pierce potatoes with a fork several times, then place on a lined cookie sheet. Bake potatoes for 45-60 minutes. Prepare protein and sauté or roast veggies. Finish with your choice of toppings: roasted veggies, cheese, guacamole, salsa, sour cream, Greek yogurt, etc.
