The Audible Kitchen Recipe:
French Onion Soup with Tofu Croutons
Tofu Croutons:
▪ 1 pound firm tofu (drained)
▪ 4 tablespoons tamari (I use low sodium tamari)
▪ 4 tablespoons balsamic vinegar
▪ 4 teaspoons dried rosemary
▪ oil to lightly spray baking sheet
Prepare Tofu Croutons:
Cut the tofu into 1/2-inch cubes. Place the tamari, balsamic and rosemary in a glass baking pan and stir. Add the tofu and toss. Marinade (in the fridge) for at least 1 hour. Remove the marinated tofu croutons and place on a baking sheet and bake at 350 for 12 minutes. Turn cubes and bake for an additional 12 minutes.
French Onion Soup:
▪ 2 large onions (organic sweet onions are best!)
▪ 2 tablespoons vegetable oil (I use olive oil)
▪ 1/4 cup unbleached all-purpose flour
▪ 4 cups water
▪ 1/4 cup tamari
Prepare the Soup:
Heat the oil in a large pot (I use a 4-quart pot) over medium heat. Add the onions and stir for about 2 minutes. Add the flour and toss to coat the onions. Stir in the water and tamari. Bring to a boil. Lower to just below simmer. Cover and continue cooking until the onions are tender (about 15 to 20 minutes.)
To Serve
Ladle into soup bowls and top with the croutons (which should be reheated in the microwave or by tossing in a skillet over medium heat if they’ve gotten cold)
