This is an excerpt of a talk I gave at the Institute for Advance Study in Princeton, New Jersey on The similarities between African cooking and Jazz. Improvisation is creating as you go along. Jazz musicians play by ear and from printed music, and then they improvise or give solos. Similarly, so do cooks particularly those of West and Central African heritage on the continent and throughout the Americas. These cooks come from cultures steeped in oral histories in which griots taught a communities’ history from one generation to the other. Recipes passed from one generation to another in a similar way; from one woman to another woman, from one generation to another generation.
