Sulfur… natural wine… let’s talk about it.
What is sulfur? Why is it important? What does natural wine actually mean?
I get into all these questions in this episode, regarding why using sulfur outside in the vineyard and during the wine making process is important. Each winemaker has their own process and way of doing things but there is a general rule of thumb for everyone across the board…. make sure the integrity of the wine is protected at all times. I dive into oxidation and how some white wines may have higher amounts of sulfur if the skins were separated in the winemaking process. One thing I love about where I currently am working is that they dry farm and stick to the natural way of making wines. My take on wine is simple, stick to the natural wine making process but do what is necessary to to preserve the wine you make.
