Growing up in a family with an Italian mum and Indian father, Adam Dsylva (Coda, Tonka, Boca) experienced an abundance of incredible food as a kid. It ignited a passion to become a chef, and saw him rise the ranks of some of Australia’s best restaurants until he got the opportunity to open his own restaurant. Now with multiple award-winning venues focussing on modern Asian and Indian cuisines, he’s tapped into his Italian heritage with a top shelf gelato offering.
