While growing up in Glenn McCue’s (Old Young’s, WA) family would go on a yearly vacation to Greece where the sun, simple cooking and quality ingredients made a huge impact on his perceptions of good food. The experience spurred him to become a chef, and after rising the ranks of some of Dublin’s best restaurants, he headed to Western Australia where his food education took a dramatic turn. Now he’s part of a team at a venue working with indigenous communities and local growers to create a menu that truly speaks of the Swan Valley.
