After travelling to Naples to study his craft with the Associazione Verace Pizza Napoletana (AVPN) –experts widely considered the world authority on traditional Neapolitan pizza making, Johnny Di Francesco (400 Gradi) returned home to open his first restaurant. With that style of pizza relatively unknown in Australia business was really tough until a bad review by a renowned restaurant critic changed everything. With photos of his Neapolitan style pizza appearing in the paper, well-travelled food-lovers flooded his establishment for a taste of the real deal. He’s expanded to 11 restaurants; an Italian deli and gelato shop since and even took the title of best pizza maker on the planet.
