After moving to Australia to broaden his culinary horizon Sam McCallum (St Siandra) landed a job at Nomad Sydney. Over six years he worked his way up to the role of head chef until a fire in the restaurant and the pandemic changed everything. As Nomad re-built an opportunity to help build a coastal seafood restaurant from scratch emerged and he grabbed it with both hands.
