After landing a job in one of Canada’s best restaurants Shanteh Wale (Quay) discovered a whole new respect for the art of front of house and wine service. Keen to immerse herself in the culture of one of Australia’s very best restaurants she headed back to Sydney and found a way through the door and onto the floor. After years of rising the ranks learning every element of service she’s now leading the largest team of sommeliers for a single venue downunder to create one of the country’s most unique food and wine experiences.
