In your mixing glass add
2oz Hayman’s Old Tom Gin
1 oz Dry Vermouth
1/3 oz of Benedictine D.O.M liqueur
2 dash of Orange bitters
Stir for 30 to 40 rotations
Strain into chilled coupe glass
Garnish with an orange twist
Toma-tini
In a mixing glass add:
2-3 cherry tomatoes
1 basil leaf
Pinch of sea salt
Crack of pepper
Muddle
2 dashes black lemon bitters
2 oz gin, Olive Leaf Four Pillars
1 oz dry vermouth
Splash of champagne vinegar
Strain into chilled coupe glass
