Docking Bay 7's Yobshrimp Noodle Salad
Vinaigrette Ingredients:
- 1/2 cup low-sodium soy sauce
- 2 TB lime juice
- 1 tsp sugar
- 1 clove garlic, minced
- 1 tsp hot sauce
- 1/2 tsp xanthan gum
Noodle Salad Ingredients:
- 4 oz vermicelli rice noodles
- 12 cooked medium shrimp
- 1/4 red bell pepper, sliced thin
- 2 oz carrots, peeled & sliced thin
- 4 oz mushrooms, sliced
- 1/2 red onion, sliced thin
- 1/2 tsp minced cilantro
- pinch of salt
Directions:
- To make the vinaigrette: combine all of the ingredients in a food processor and puree until smooth. Transfer to a small bowl, cover, let sit in the fridge overnight.
- To make the noodle salad: cook noodles about 15 minutes until cooked through. Rinse the noodles in cold water and drain. Toss with the shrimp, bell pepper, carrots, mushrooms, onion and the vinaigrette. Sprinkle with cilantro & salt before serving.

Ingredients:
- 1 cup organic rice milk
- 2 cups canned Dole pineapple
- 1 cup unsweetened coconut Silk milk
- 9 drops McCormick blue food coloring
- 1 cup watermelon chunks
- 1 1/2 tsp Hobbyland Dragon Fruit flavoring drops
Directions:
- Combine all ingredients in a blender and blend until smooth.
- Put contents through a fine mesh strainer.
- Serve chilled.
