I’ve started multiple concepts… some Rock N Rolled right from the get-go. Another needed a total about face and re-branding, while yet another never really got legs and I had to sell it.

Point is, there are thousands of details that play into the concept of a restaurant. These details determine whether you catch the public’s imagination, their dining dollar and repeat business, tread water or possibly go under. I’ve seen and done both.
