In the few years since opening Lough Ree Distillery has picked up numerous accolades for their Sling Shot Gin. The spirit is produced in their micro-distillery on the banks of the river Shannon but the company will open a full distillery soon, paving the way for a range of spirits.
Here Peter discusses the vision behind the project that started as a discussion around a dinner table, the development of Sling Shot Gin and how it got its, their plans for growth and the necessity of remaining true to their roots.
