Shinobu Kato is the head brewer and founder of Kato Sake Works in Brooklyn, New York. Shinobu is one of a very small number of sake brewers in the United States. Born in Tokyo, Shinobu began brewing sake when he realized that there was a lack of quality sake in the States. We talked about his journey and all things sake in this episode.
