Afrim Pristine is the world’s youngest maître fromager, practicing affinage, or the art of aging cheese. He owns the Cheese Boutique in Toronto, Canada, a 3-generation, almost-50-year-old cheese store that houses 450 kinds of cheeses. Cheese Master Afrim Pristine is one of my dearest culinary comrades and I asked him back to dish on his love story with cheese.
