Mikiko Ando is one of America's only female sushi chefs. For years, she wanted to become a chef but was told that women could never be sushi chefs because of an old-school taboo: male chefs believe that when women menstruate, it affects their sense of taste and body temperature, making it impossible for them to properly prepare sushi. Eventually, Mikiko became the head sushi chef at a restaurant in San Francisco. She talks here with reporter Sayaka Matsuoka.
