COVID-19 has hit the restaurant industry particularly hard shuttering long standing businesses with no clear future. In the midst of reopening the beloved Gypsy Apple Bistro in Shelburne Falls, MA this summer, Chef and owner Michaelangelo Wescott was debilitated with both Lymes and a rare tick borne parasite resulting in a diagnosis of Babesiosis. Being a cancer survivor, a lack of spleen exponentially increased the severity of his condition. This resulted in a two week hospitalization at Mass General and an indefinite closure of Gypsy Apple Bistro while recovery continues.
