According to NutritionFacts.org, sweet potatoes are among the healthiest with one of the highest nutrient-rich food scores per dollar, and can be considered a superfood.
Mom used to make roasted sweet potato in our traditional coal stove, and Dad liked to make candied sweet potato at festivals. Even today in my mind I could still picture the green sweet potato leaves in our small vegetable garden back then.
Mom and Dad, you both were amazing. Thank you for having made us healthy food at home. Mom, I’ll make you sweet potato mash next time when we meet. Happy Mother’s day to you, and to all mothers out there!
