2 ¼ cups unbleached , all-purpose flour
½ tsp. baking soda
1 tsp. baking powder
1 cup shredded coconut
½ tsp salt
1 cup sugar
3 oz. cream cheese, at room temperature, cut into small pieces
Zest of 1 key lime
½ cup butter, melted and still warm
1 large egg, room temperature
1 Tbsp. whole milk
1 Tblsp. Key lime juice
½ cup powdered sugar for rolling cookies

Preheat oven to 350 F.
Line cookie sheet with parchment paper.
Place sugar, cream cheese and lime zest in a large bowl. Pour warm butter over this and whisk until all combined.
Add egg, milk and juice, whisk well.
Add flour, salt, baking soda, baking powder and coconut.
Mix with rubber spatula until completely combined.
Form 1-inch balls and lightly coat with powdered sugar.
Place cookies on the baking sheet about 2 inches apart.
Bake for 10 min.
