Sabrina Marmorale is a third generation cheesemaker at La Vera, a South Australian family cheesery which hails to origins in Italy. La Vera has been a hidden gem for decades, and has just stepped into the retail limelight and released a unique new cheese, the Belmondo Buffalo Blue, the first made with 100pc buffalo milk from the SA Murraylands. The milk is super creamy but gentle on the gut, so goodness all round. PALAT member Dianne Mattsson reports from Adelaide.
