Today we talk to someone that we all admire, Jason Hammel.

Jason Hammel is the chef and owner of Lula Cafe in Logan Square and the co-founder of the non-profit Pilot Light Chefs. Originally from New Haven, CT. he now lives with his wife, musician and Lula co-founder Amalea Tshilds, and their two children in Logan Square.

Today we dive in about how he started in this industry, how Lula grew into what it is today and his core values that have guided him and his team along the way. We talk to Jason about his efforts to safe Independent restaurants during this time, things that need to change and what the future of hospitality looks like. We talk about how the we need to reimagine where we get our food, supporting local farmers and creating a local ecosystem that works off of one another.
