Description

Pre-heat your oven to 200°c - 240°c
Cooking time 3 1/2 hours - 4 hours
(500g/20minutes) weight ration to cooking time.
-Turkey +/- 5kg
-Foil enough to cover the turkey

INGREDIENTS FOR THE STUFFING
-12 cups bread cubes
-1 cup butter
-3/4 choppep onion
-1 1/2 cup chopped celery
-1 cup chopped mushroom
-2 tsp salt
-1 tsp white pepper
-1 Tbls chopped rosemary
-1 Tbls chopped thyme

Method.
1. Melt your butter
2. Cook your chopped onion, celery, mushroom until soft.
3. Add your salt and pepper and the herbs
4. Remove from the heat.
5. In a large bowl put your bread and mix in your cooked ingredients
6. Season your turkey with salt & pepper then stuff it with the bread stuffing.

FOR SPICE RUB
-2 Tbls of the following:- white pepper, salt, paprika & mixed herbs and olive oil.

Method.
1. Mix all the ingredient and rub the outside of the chicken
2. Put your stuffed and spiced rub turkeyon a roasting tray & cover it with the foil.
3. Put your turkey in the pre-heated oven and roast.
4. Last 30minutes of roasting, remove the foil and brown the turkey to a nice crispy golden brown colour.
5. Remove the turkey from the oven and let it rest for at least an hour before carving.
