Description

Mizuki is a Japanese restaurant, featuring four kinds of cuisine – featuring Kaiseki – Japanese traditional haute cuisine, Sushi, Tempura and Teppanyaki.

This is a place where guests can enjoy artistic Japanese food, where each dish is born from the creative ideas of each chef. Mizuki is a world that stimulates all five senses, situated in a special space overlooking a rock garden and waterfall.

Chisaki was in Tianjin, China, recently as a Guest Chef at The Ritz-Carlton Tianjin's Zest Restaurant, where she dazzled diners with her amazing culinary marvels.

She's a great believer in letting the ingredients talk for themselves, so I was really pleased that she would talk to me about them!

This interview was recorded at Zest over breakfast, and ranges over how Chisaki came to be a Chef, her travels before that, and just what it takes to work with fish and rice (because there's a lot more to sushi than that...).
