- Instant Pot Risotto (adapted from Allrecipes.com)
- 2 TBS olive or avocado oil
- 1/4 cup finely diced onion
- 1-2 cloves garlic, minced
- 1 cup Arborio rice
- 2 1/4 cups chicken broth (or 2 1/4 cups water + 1 bouillon cube)
- 1/4 cup diced mushrooms and/or 1/4 cup baby green peas (optional)
- 2 TBS butter
- 1/4-1/2 cup shredded Parmesan cheese
- Use sauté function on IP to heat the oil. Add onion, sauté for 3-4 min, stirring. Add garlic and stir until fragrant (about 30 sec ). Add rice, stir constantly, until rice starts to toast lightly (1-2 min).
- Pour in the broth, add optional veggies if using. Put lid on and lock into place. Press Manual and set for 6 minutes, high pressure.
- When cooking is complete, carefully manually release pressure fully and remove lid. Stir in butter and parmesan until creamy and fully combined. Top with fresh parsley if desired. Serves 4 side portions or 2 hearty main.
