On this week’s episode of the Cultivated by Caryn Show, host Caryn Antonini is joined by guest, Linda Garnett, consultant for Black River Caviar, the First Southern hemisphere caviar farm located on the Rio Negro in Uruguay. Linda is well versed in the world of caviar, having spent time in the former Soviet Union in the early 90’s, at a time when the best quality caviar came from countries around the Caspian Sea,
Black River Caviar began 30 years ago when Walter Alcalde pursued his dream of becoming the first Southern Hemisphere caviar producer in the world. During his years of provisioning Atlantic fishing boats on the Rio Negro, Walter met Russian sailors who introduced him to both caviar and the business of caviar. In the 1980’s Walter seized on an opportunity to farm raise sturgeon when overfishing had depleted in the Caspian Sea.
