El Pronto Chicken
4 boneless /skinless Chicken Breasts (the halves)
1 stick of Butter - melted
¾ Cup of Seasoned Breadcrumbs (not Panko)
½ Cup of Parmesan Cheese
- Dip chicken in the melted butter
- Mix together breadcrumbs, cheese & some
- garlic powder & salt & pepper
- Roll the buttered chicken in the breadcrumbs
- Place in a 9” x 13” greased baking dish/pan
- Cover & bake at 350 degrees in a preheated oven for 55 minutes
- Serve with a bed of rice or potatoes and a green vegetable
Malted Smores Ice Cream
½ Cup of mini Marshmallows
1 Pint of Softened Vanilla Ice Cream
¼ Cup of Malted Milk Powder
3 Graham Crackers – crumbled
- On parchment-lined baking sheet,
- bake marshmallows at 425 degrees,
- until just golden – 1-2 minutes
- In a large bowl, mix ice cream & malted
milk powder
- Using a rubber spatula, fold in graham
- crackers & cooled marshmallows
- Freeze until firm, at least 2-3 hours
- Serve drizzled with chocolate syrup
