Episode 56 of this Big Bite Mini Series covers "an unorthodox take on the classic mid-afternoon refresher" and it does not disappoint.  With simple ingredients, this boozy summer cocktail is lightly infused with the medicated rich simple syrup from last week's episode.  A crowd pleaser that will serve 10 or more people, make parts of this ahead of time to finish the assembly when you're ready to serve.  Alternatively, make this a half batch and keep it for yourself to enjoy.

Herb-Infused Oil

Rinse the herbs well, removing dried out, bruised or wilted leaves/stems.  Pat them dry and stuff them into a pint-sized jar.  Cover them with olive oil and the set the jar in a window.  Every day for 4-6 weeks, shake the jar and return it to the windowsill.  The longer the herbs steep, the stronger the herbal flavour will become.  Taste it after 4 weeks.  After 4-6 weeks, strain out the herbs with cheesecloth in a fine mesh sieve.  Discard the herbs and the pour the oil into a clear jar.  Store in a cool dark place and use within 9 months.
