Alpha-gal syndrome (AGS) is a serious allergy to red meat and other mammalian products (like some dairy and medications) caused by a tick bite. The reaction is unusual because symptoms are often delayed by 2 to 6 hours after eating, making it difficult to diagnose.
The Culprit: The allergy is triggered when certain ticks, primarily the lone star tick in the U.S., transmit a sugar molecule called alpha-gal (galactose-α-1,3-galactose) into a person's bloodstream through their saliva.
