欢迎来到声游咖啡馆墨尔本站的最后一个目的地- 位于Abbotsford的 Supreme Coffee。
红底白字的喷漆logo和“Supreme”这个单词，不由得让人联想到那个风靡全球的潮牌。不要误会，这不是潮牌的周边咖啡店，而是一间起步于新西兰发展于澳大利亚的精品独立咖啡店。
从CBD到Abbotsford
无论是长居墨尔本，还是临时到访，电车都是最方便快捷的交通工具之一。从繁华的市中心街道，摇摇晃晃不到20分钟便可到达Abbotsford。Coffee Supreme所在的区域大多是仓库，如果工作日前往，除了开过的货车还有部分工人，几乎遇不到什么人。走在太过于安静的地方，时不时会怀疑一下自己是不是走错了路。终于在最后一个转角，看到了鲜红色的logo安静地钉在墙边，在阳光下闪闪发亮。卷帘门被刷成鲜红色，搭配外墙的乳白色显得活泼大方。店里多采用原木色装修，周边和咖啡豆以及工具则分门别类地排列在不同区域。店里提供的餐食有限，大多是一些普通的面包点心以及三明治，毕竟咖啡才是这里的重头戏。阳光好的时候，喜欢交际的大家都会挪到室外的长桌上边喝咖啡边聊天，顺便能看看运送咖啡豆的小货车来来回回；喜欢一个人呆着的人也可以从室内，看到一墙之隔的烘焙工坊，是怎样一步步加工新鲜的咖啡豆的。
如今，许多墨尔本的精品咖啡店都在尝试自己烘培咖啡豆。决定烘焙结果好坏的关键，一是对温度和时间的把握，二是咖啡生豆的质量。一颗咖啡豆从绿色慢慢变成咖啡色的过程，是对烘焙师的考验。烘焙时间太长，咖啡豆容易烧焦产生糊味；烘焙时间太短，风味还未来得及形成。在互联网和电脑智能普及的今天，烘焙曲线可以轻松由电脑记录及复制，但这过程，必须需要有经验的人参与。另外，再厉害的烘焙师如果没有高品质的生豆，也无法烘焙出风味迷人的咖啡，道理和我们常说的“巧妇难为无米之炊”是一样的，这也是Coffee Supreme一直致力于采购高品质生豆的原因。和Fair Trade Organic的合作，不仅提高了咖啡豆的质量，也改善了咖啡豆产区国家种植咖啡豆农民们的生活，尽管这意味着有时候得去更偏远的地方采购，但带来的公平贸易更有利于全球咖啡产业的良性循环。
从新西兰到墨尔本到全世界
和之前我们介绍的墨尔本本土咖啡店不同，Coffee Supreme是一个来自新西兰的咖啡品牌，在1993年由Chris Dillon和Maggie Wells在惠灵顿创立。彼时，Coffee Supreme还只是一家名为Reds的小小咖啡店，经营得很不错，然而一场财务危机轻而易举地摧垮了这间年轻的小店。但创始人Chris不愿放弃，决定在Reds咖啡店的基础上，重新建立起了新的咖啡品牌，也就是我们现在看到的Coffee Supreme。当时他们只有零星的客人，加上脆弱的咖啡供应链、沉重的债务和不被认可的声誉，让创始人们一度怀疑自己是不是做了错误的决定。在克服了重重困难之后，Coffee Supreme迎来了成长期，并在千禧年将目光投向了被誉为世界咖啡之都的墨尔本。当时的两名员工Justin Emerson和Marsha Pontington从墨尔本旅行归来，大胆地提出了进军墨尔本的想法：他们希望Coffee Supreme品牌能重新在墨尔本落地发展，说服了创始人便简单地收拾行李，带着小小的烘豆机，漂洋过海来到了墨尔本市郊Cremorne，为Coffee Supreme的征程翻开了新的重要篇章。
在2000年代，墨尔本的咖啡文化和当地人们对咖啡口味的偏好和现在我们看到的有些许不同。咖啡伴随着意大利移民进入墨尔本，当地的咖啡市场自然而然地由几家本地传统的意大利大烘焙工坊主导。这种靠长期实际操作所验证的深烘咖啡豆不仅主导了墨尔本的咖啡市场，也“统治”了墨尔本人民的味蕾。这也意味着，初来乍到的Coffee Supreme很快出现了水土不服的现象。习惯了深烘的墨尔本当地人对他们的咖啡并不买账，他们嫌弃Coffee Supreme的豆子不够“像咖啡”，并以“稀释过的奶昔”来形容。实际上这是本土咖啡品牌过度烘焙的表现，但人们却不知道自己喝进去的是这样可怕的味道。Justin和Marsha别无他法，只能像做实验一般，劝服几个潜在客户在1-2周内不要接触当地的深烘咖啡品牌，只尝试他们的咖啡。再让这群客人在“味蕾排毒”后，对比品尝Coffee Supreme和其他本土品牌咖啡，让他们从中感受到两者的区别。这种方法听上去效率不高，但付出会得到回报。他们幸运地吸引了一些接受他们的客人，更幸运的是，这些客人在未来都成为了墨尔本精品咖啡产业的主要影响人，这包括来自ST. ALi和Seven Seeds的Mark Dundon。在2001年后，Coffee Supreme飞速地成长，并为墨尔本如今的精品咖啡做出了不小的贡献。

FLOWCoffee中国版声游全球咖啡馆| 这个咖啡“潮牌”，或许你还“真”不认识「声游全球咖啡馆」是FLOWCoffeeMedia旗下一档声音漫游栏目。FLOWCoffeeMedia搞了个很COOL的逛遍全球咖啡馆的任意门：将全世界有意思、充满热情和特点鲜明的咖啡馆，都收在了小小的耳机里， 实现线上咖啡馆的云游计划。透过声音，感受全球咖啡文化的多样性和生命力， 放松身心，漫步咖啡世界。FLOWCoffeeMedia进入2.0时代后，「声游全球咖啡馆」也第二季正式开播！这一季将通过两位主理人的观察和探索、邀请身边的好友或者听众投稿的方式，以系列专题的形式透过声音更加深入的云游全球有意思、有故事的咖啡馆。「声游全球咖啡馆」第二季声游澳洲系列 第五站 Supreme Coffee欢迎来到声游咖啡馆墨尔本站的最后一个目的地- 位于Abbotsford的 Supreme Coffee。 红底白字的喷漆logo和“Supreme”这个单词，不由得让人联想到那个风靡全球的潮牌。不要误会，这不是潮牌的周边咖啡店，而是一间起步于新西兰发展于澳大利亚的精品独立咖啡店。从CBD到Abbotsford无论是长居墨尔本，还是临时到访，电车都是最方便快捷的交通工具之一。从繁华的市中心街道，摇摇晃晃不到20分钟便可到达Abbotsford。Coffee Supreme所在的区域大多是仓库，如果工作日前往，除了开过的货车还有部分工人，几乎遇不到什么人。走在太过于安静的地方，时不时会怀疑一下自己是不是走错了路。终于在最后一个转角，看到了鲜红色的logo安静地钉在墙边，在阳光下闪闪发亮。卷帘门被刷成鲜红色，搭配外墙的乳白色显得活泼大方。店里多采用原木色装修，周边和咖啡豆以及工具则分门别类地排列在不同区域。店里提供的餐食有限，大多是一些普通的面包点心以及三明治，毕竟咖啡才是这里的重头戏。阳光好的时候，喜欢交际的大家都会挪到室外的长桌上边喝咖啡边聊天，顺便能看看运送咖啡豆的小货车来来回回；喜欢一个人呆着的人也可以从室内，看到一墙之隔的烘焙工坊，是怎样一步步加工新鲜的咖啡豆的。如今，许多墨尔本的精品咖啡店都在尝试自己烘培咖啡豆。决定烘焙结果好坏的关键，一是对温度和时间的把握，二是咖啡生豆的质量。一颗咖啡豆从绿色慢慢变成咖啡色的过程，是对烘焙师的考验。烘焙时间太长，咖啡豆容易烧焦产生糊味；烘焙时间太短，风味还未来得及形成。在互联网和电脑智能普及的今天，烘焙曲线可以轻松由电脑记录及复制，但这过程，必须需要有经验的人参与。另外，再厉害的烘焙师如果没有高品质的生豆，也无法烘焙出风味迷人的咖啡，道理和我们常说的“巧妇难为无米之炊”是一样的，这也是Coffee Supreme一直致力于采购高品质生豆的原因。和Fair Trade Organic的合作，不仅提高了咖啡豆的质量，也改善了咖啡豆产区国家种植咖啡豆农民们的生活，尽管这意味着有时候得去更偏远的地方采购，但带来的公平贸易更有利于全球咖啡产业的良性循环。从新西兰到墨尔本到全世界和之前我们介绍的墨尔本本土咖啡店不同，Coffee Supreme是一个来自新西兰的咖啡品牌，在1993年由Chris Dillon和Maggie Wells在惠灵顿创立。彼时，Coffee Supreme还只是一家名为Reds的小小咖啡店，经营得很不错，然而一场财务危机轻而易举地摧垮了这间年轻的小店。但创始人Chris不愿放弃，决定在Reds咖啡店的基础上，重新建立起了新的咖啡品牌，也就是我们现在看到的Coffee Supreme。当时他们只有零星的客人，加上脆弱的咖啡供应链、沉重的债务和不被认可的声誉，让创始人们一度怀疑自己是不是做了错误的决定。在克服了重重困难之后，Coffee Supreme迎来了成长期，并在千禧年将目光投向了被誉为世界咖啡之都的墨尔本。当时的两名员工Justin Emerson和Marsha Pontington从墨尔本旅行归来，大胆地提出了进军墨尔本的想法：他们希望Coffee Supreme品牌能重新在墨尔本落地发展，说服了创始人便简单地收拾行李，带着小小的烘豆机，漂洋过海来到了墨尔本市郊Cremorne，为Coffee Supreme的征程翻开了新的重要篇章。在2000年代，墨尔本的咖啡文化和当地人们对咖啡口味的偏好和现在我们看到的有些许不同。咖啡伴随着意大利移民进入墨尔本，当地的咖啡市场自然而然地由几家本地传统的意大利大烘焙工坊主导。这种靠长期实际操作所验证的深烘咖啡豆不仅主导了墨尔本的咖啡市场，也“统治”了墨尔本人民的味蕾。这也意味着，初来乍到的Coffee Supreme很快出现了水土不服的现象。习惯了深烘的墨尔本当地人对他们的咖啡并不买账，他们嫌弃Coffee Supreme的豆子不够“像咖啡”，并以“稀释过的奶昔”来形容。实际上这是本土咖啡品牌过度烘焙的表现，但人们却不知道自己喝进去的是这样可怕的味道。Justin和Marsha别无他法，只能像做实验一般，劝服几个潜在客户在1-2周内不要接触当地的深烘咖啡品牌，只尝试他们的咖啡。再让这群客人在“味蕾排毒”后，对比品尝Coffee Supreme和其他本土品牌咖啡，让他们从中感受到两者的区别。这种方法听上去效率不高，但付出会得到回报。他们幸运地吸引了一些接受他们的客人，更幸运的是，这些客人在未来都成为了墨尔本精品咖啡产业的主要影响人，这包括来自ST.
