Harlem SayEP125 採買IGP、AOP相關產品，讓你立馬有在國外感（生蠔隨你吃、葡萄酒任你喝的一晚12/14晚上受邀去參加法國美食三重奏（2021 Gourmet Trio Night），活動由歐盟贊助。法國美食享譽國際，除了法式料理的創意巧思與精緻廚藝外，採用的食材還是有技巧的，我們技不如人，用最簡單的方法先保障品質至少是不錯的開始，其中，產於法國西部海岸的馬雷恩—歐雷宏 IGP（地域保護標誌認證）生蠔（Huîtres Marennes Oléron IGP）與夏朗德—普瓦圖 AOP（歐洲原產地名保護標誌）奶油（Beurre CharentesPoitou AOP），以及中部的夏布利 AOP（歐洲原產地名保護標誌）葡萄酒（Vins de Chablis AOP），風土特質的特性，相互搭配起來就充滿優雅的法式美味節奏！今晚就來點……哈林說~ #Chablis #AOP #IGP #POD #EnjoyItsFromEurope #哈林說 #wine #葡萄酒 #生蠔 #奶油很歡迎大家的支持來，請我喝一杯的( 威士忌/葡萄酒/咖啡)， 下次播出時，我會跟大家說誰請我們喝哪一杯了..... ^^歡迎抖內 ( $$$ ) --> https://pay.firstory.me/user/harlemsay本週二，12/14晚上受邀去參加法國美食三重奏（2021 Gourmet Trio Night），活動由歐盟贊助。地點在遠東香格里拉飯店38F的馬可波羅酒廊，稍早的今年年初，我也參加過一次類似的活動，也是歐盟贊助，由推廣法國飲食文化不遺餘力的Sopexa法國食品協會主辦，這次跟上回一樣由夏布利（Chablis）與其百搭的生蠔，再加上奶油，三項法國飲與食的撞擊，只是地點更高了，嗯...38F樓呀，上次是一樓的歐式庭園。我到了現場時，我很注意，大家的穿著，因為邀請信中的注意事項，寫著：大地色系正裝(穿著拖鞋恕無法入場)。我一直在想誰會穿拖鞋來到這樣的餐酒的場合呀？另外大地色系？那是什麼色？我全黑的，是黑鴉鴉柏油路的顏色應該沒有錯吧？大地是什麼顏色？紅色？還是綠色？等我來到現場，沒有那麼嚴格啦！很準時的六點半就出現在現場，正在擺設比較好拍，這一場來的比較多是網美、KOL，因為比較明顯好幾位就開始拍攝起來了，就接待人員的私下說顏值相對的高。是，沒錯，上次就很混雜。這次採開放式的方式，自己取餐與酒，再加上服務人員也會不定時托著盤子，逐桌的詢問要不要小披薩、炸花枝、烤蝦串等等食物。桌位也相對的大，有點距離，但也容納五十人左右。這次與上回最大的不同，就是感受到沒有花很長的時間在解說，但是還是有介紹，比較放在自由體驗，而且還把步驟寫在立牌上，教大家有三個步驟：* 咬一口奶油，搭他們的法棍，品味奶油淡淡的榛果味及新鮮的口感。* 將生蠔肉放入口中，與法棍一起咀嚼，使兩者結合，並享受食物融合後散發的香氣。* 嚥下前兩者後，再品一口夏布利（Chablis）葡萄酒，感受香氣、味道的一致。看似簡單只有這樣三種品嚐，但其實不止，因為他們的法棍就有三款（還有酸種法棍），生蠔有四款，Chablis葡萄酒就有五款，奶油有五款，更不要說還有蜜汁烤豬肉、鹽烤鮭魚及其他的食物，最重要的是還有邀請高雄法餐名廚的簡天才主廚等別設計的「溫.生.蠔」--奶油佐生蠔。一晚忙著品噹這些就夠你忙了。除了主持人簡單的解說今晚讓大家好好的品嚐一下，也請侍酒師李冲恕來稍微解說主要的奶油、生蠔、Chablis葡萄酒。以下除了侍酒師解說，外加我幫各位從這三項產品的公、協會網站擷取資料補充。夏朗德-普瓦圖乳製品合作協會 / Syndicat des Laiteries Coopératives des Charentes et du Poitou (ACLCCP) 夏布利葡萄酒 Chablis AOP (BIVB) - 布根地葡萄酒公會 / Bureau Interprofessionnel des Vins de Bourgogne (BIVB)馬雷恩-歐雷宏生蠔品質聯會 / Groupement Qualité Huîtres Marennes Oléron (GQHMO)奶油先來說說奶油，奶油就跟葡萄酒一樣，在法國跟葡萄酒一樣都有產地認證的制度。產地認證是歐盟國家共識，尤其是法國，重視物產的來源，除了葡萄酒，在許多農、漁、牧業，都有這樣的概念，在購買食品時，會特別註明原料來自哪裡，法國不同產區奶油風味的差異影響了餐的美味，法國人煮餐很多都需要奶油，料理好不好，就是從一塊好的奶油開始。夏朗德-普瓦圖 的奶油，跟葡萄酒一樣有獲得歐洲原產地命名的認證，在原料跟製造過程都非常嚴格且講究。* 奶油必須使用100%來自當地乳牛所產的鮮奶；* 乳牛吃的飼料，也是來自當地的新鮮牧草和玉米；* 鮮奶會立刻被送到附近的工廠製成奶油；* 16小時以上的熟成。保護標証的歷史前面提到的＂獲得歐洲原產地命名的認證＂指的是受保護的原產地名稱（PDO），全名是原產地名稱保護制度 Protected Designation of Origin (PDO)，通常是歐洲共同體在使用的，就是說其他也會有自己的縮寫，例如法國就用AOP (Appellation d’Origine Protégée)—法定產區名稱保護，它之前就是 AOC (Appellation d’Origine Contrôlée)—法定產區名稱管制。從歷史上看，是為了打擊詐騙，原產地名稱的概念從二十世紀初（1905年法律）開始建立起來。關於保護葡萄酒市場的創建了原產地名稱法令（1935年），一開始適用於葡萄酒和生命之水（雅瑪邑），以及負責其定義，保護和控制的機構，到了1990 年才向所有農產品和食品開放。後來，法國農產品增值政策激發了歐洲法規的發展，該法規於1992年為葡萄酒和生命之水以外的產品建立了PDO的概念，相當於法國的AOC，並於2009年將其擴展到葡萄酒。從那時起，PDO一直涉及所有歐洲葡萄酒和農業食品，這些產品的生產，加工和製作是在特定的地理區域內進行的。根據公認的專業知識和特定的規格，為了向消費者報價清楚，自2012年1月1日起，一旦在歐洲註冊，相關產品必須有PDO術語，僅允許葡萄酒帶有法國原產地名稱AOC / AOP。簡單的說，PDO的標章負責保護整個歐洲的法國和歐洲產品。它證明產品的真實性，並保證其地理來源和對傳統知識的尊重。表示產品符合規範，並受控制程序的約束，由INAO(法國法定產區名稱管理局)或國家原產地和品質研究單位所批准的獨立機構實施。奶油品牌晚上有五款奶油，分別是4個品牌：Eurial (Marques Grand Fermage et La Conviette) Eruial 是具有多專業的公司，也是乳製品合作社，它有兩個品牌 - Grand Fermage、La Conviette。 該組織主要特色，是他們產地的養成是個生物多樣性滋生地！通過維護它們，農民幫助保護土壤和水質，並允許動植物物種進食和繁殖，農民通過他們相互尊2021-12-1832 min
