The book of Vayikra is when we finally get to put the Mishkan into action. We're out of Egypt, we've become our own nation, and we've built the Mishkan - now it's time to use it in the service of God. How do we do that? By slaughtering animals. Wait, what? Why is that the way to serve Hashem? What's the point? What's the benefit? And if there is a benefit, how do we replace that in the absence of the Temple?
