本集訪談到 2014 WBC 冠軍，井崎英典(Hidenori Izaki)，他的15歲的時候從高中戳學，進入家族的咖啡產業開始擔任Barista。從多次贏得日本咖啡師冠軍，到最終贏得世界咖啡師冠軍，井崎英典是如何成功做到的？他表示自己從成為咖啡師一直以來，都以成為第一個亞洲咖啡師冠軍，做為自己的夢想(dream)及野心(ambition)，也是這份野心，引領他克服各種難關完成目標。井崎英典在各種場合都充滿熱情，樂於與人交流，這是因為他不但喜歡咖啡，更熱愛咖啡產業的人，他同時視自己為咖啡專業人事，而非單純對咖啡狂熱的人，因此更樂於與咖啡產業裡各種人互動。
詢問井崎英典在2014年比賽時使用的哥斯大黎加Monte Copey的咖啡豆，他表示在與莊園主溝通時，有設定這支豆子必需具有的明確目標，例如要更多甜度，少點酸度，要有好的厚度與口感，想要的風味等等，將這些KPI都列出後，由Monte Copey莊園主負責完成。雙方在溝通互動上各自尊重對方的專業，並合作將目標架構清楚。當時井崎英典人在日本，透過Facebook等網路溝通工具，仍然可以和遠在哥斯大黎加的莊園主密切討論，最後一起協力完成這支豆子。
問到在取得冠軍頭銜後，如何維持對咖啡技術與知識的學習？關鍵在於好奇心。即使在成為冠軍之後，井崎英典發現咖啡領域中還有許多他不知道的知識，也因為認識產業中許多人，例如James Hoffmann, Matthew Perger及Sasa Sestic，這些人的眼界都非常遠，同時也對咖啡求知若渴，並保有好奇心，受這些專業咖啡人的影響，井崎英典也因此熱愛學習咖啡知識，想要瞭解更多。
