Mighty Millets: The grain of the year’s underutilized potential
Are you curious about the grain of the year? Join us for education, inspiration, and exploration of opportunities to engage with the untapped potential of millets. Given the interest in gluten-free food products, ancient grains, and novel food sources, millets have received more attention lately, including the designation of 2023 as the International Year of the Millets (IYM) by the United Nations Food and Agriculture Organization. Millets are nutrient-dense, highly varied group of small-seeded cereal grains that are highly tolerant to drought and poor soil. Although these grains rank sixth in global cereal production and are recognized as “smart foods” and...

Journal Club: Pilot Intervention Using Food Challenges and Video Technology for
This presentation will describe a pilot intervention that was fielded and tested with a young adult population. The intervention was grounded in social cognitive theory and used food challenges and video technology to promote fruit and vegetable consumption. Three types of outcomes were developed for the intervention based on social cognitive theory (cognitive, affective, and behavioral). These theory-linked outcomes will be discussed in the context of a programmatic logic model that directly connects key theoretical constructs with learning activities designed to address specific outcomes. As such, the presentation will describe the use of various educational strategies and tools, such as...

How Children Search for Health Information Online: An Observational Study
Health literacy related to finding, interpreting, and using health information on the Internet is a growing field in public health. A new and innovative approach toward evaluating digital health literacy is the use of computer software programs to record a user’s search strategy in real time. In this presentation I will review efforts that have been done in the past to evaluate digital health literacy, and present a study that was done among children (9-11 years old) to understand and observe their search strategies for finding obesity-related health information.

The study used a purposive recruitment strategy to conduct 4 1-hour focus groups with SNAP recipients in Las Cruces, NM. SNAP recipients in this study have not adopted online grocery shopping for various reasons, including cost, quality control for perishable foods in particular, and distrust of the overall process. Participants expressed interest in suggested services aimed at increasing the benefits of shopping online. Additional research could inform...

Journal Club: Determining eLearning Preferences to Inform Beverage Policy Training for Early Care and Education Teachers
Decreasing intake of sugar-sweetened beverages (SSBs) and increasing consumption of healthy beverages (e.g., water and milk) among young children can help address the problem of childhood obesity. Early care and education (ECE) teachers are key to promoting healthy beverages as they play a significant role in establishing healthy habits among young children. Thus, there is a crucial need to ensure that ECE teachers are knowledgeable about recommended beverage policies. This presentation will highlight findings from a mixed-methods study exploring ECE teachers' needs and preferences for eLearning. Outcomes informed the development of beverage policy eLearning training for ECE providers.

Infant Feeding Tracker Applications: Cross-Sectional Analysis of Use
Human milk is the ideal source of nutrition for most infants, yet rates of exclusive breastfeeding and breastfeeding to 12 months remain suboptimal in the US. Mobile health technologies can address some barriers to breastfeeding by offering tracking features, data on user behavior, and information. This presentation will review the use of mobile applications (“apps”) for tracking infant feeding. Characteristics of app users, app features most used and desired by postpartum mothers, and app features most frequently available within these apps will be presented.

We will present the reach of social media dissemination of a culturally-adapted evidence-based Kid’s Healthy Eating Plate to Spanish-speaking Latinos. Using adaptation frameworks and protocols, as well as reach metrics, is essential to demonstrate cultural appropriateness and social media engagement. We demonstrate that culturally-adapted healthy eating guidelines for Spanish-speaking children were worldwide after paid social media promotion, which may help close the digital divide and promote health literacy in diverse populations.

Development and Validation of the Food Resource Acceptability Questionnaire (FRAQ)
In previous research, we identified stigma as a significant barrier to the willingness to accept food assistance, both from public health and community-based resources. As part of the Aetna Foundation's Healthiest Cities and Counties Challenge, qualitative interviews were conducted with food security advocates, low- and middle-income community members, unemployed individuals, and college students to determine root causes of food insecurity. The stigma associated with food assistance was a prevalent theme. Based on these interviews, the FRAQ was developed using social science scale development recommendations. This webinar describes how stigma impacts acceptance of food assistance, the development and psychometric testing...
